dithering v quantize

When converting graphics I have created to GIF format - in Painter 5.0 - I
have to choose between Quantizing to the Nearest Colour or Dithering
Colours. I have always chosen dithering for no other reason that I always
have. Any advice on what each actually means and which might be best for
web graphics?
