With Photoshop, you usually can accomplish something in several ways. 
Here's one:

(1) Make a copy of your layered image.

(2) Convert the copy to grayscale.

(3) Drag the layer you want from the grayscale version to your 
colored version. This gives you a grayscale layer even though you're 
working in RGB (or some other color space).
