A lot depends on how that color is held:

--  If it's a color in an RGB or JPEG image, then you'll need to do some
selection of the color range and then either replace or shift the color...
this could be Magic Wand and feathering work, it could be Replace Color,
could be some other type of pixel filter. The key problem in
color-replacement for continuous-tone images is in deciding how close a
pixel should be to the target color before it's selected for replacement.

--  If it's a color in a palettized image (such as GIF), then you could
either Magic Wand and "Select Similar" without feathering and replace, or
(in ImageReady or Fireworks) just change that palette entry to quickly
affect all pixels which reference that palette entry.

--  I understand that you don't yet use Fireworks, but a third method of
color replacement can help with batching: you can run scripts to
batch-replace the colors of objects, the fonts or contents of text, and any
URLs, which can then feed into batch-compression for reslicing, etc. (This
won't work for flat JPEGs or other image objects, but can help if a
constructed web graphic has content which needs to change.)
