QUESTION: Forms submit

Hi folks,

I'm working on a site that has things like a Join
page, etc.  Ideally, I want the forms to NOT send an
email to the webmaster, but dump data into a file on
the server for me to download later and import into a
spreadsheet.  We aren't ready for advanced database
technologies just yet, just need a simple CSV or
similar data file. 

I've checked all my usual books and web sites, but
can't find anything that goes into reasonable detail.
Suggestions, instructions, or links to instructions
would be much appreciated!  This is my first post to
the list, so please be gentle with me.  :o)
