How do I use XML?

I apologize in advance if this is a stupid question.

We're just starting to play with XML, but it's all building XML documents
as a response to requests sent to our webserver.  But I see lots of value
in having my company receive information in XML.  So how do I get my
webserver to "listen" for incoming XML documents?  How do they get to me?
HTTP POST?  FTP PUT?  Any good resources on this subject?
