I have started implementing a standard Javascript detect for the platform (Mac or Win) and I then load a platform specific style sheet. I generally make all of the Mac font sizes one size larger than Windows. It's not a perfect solution as there are still variations between the browsers within a platform, but you can further refine the script to detect platform and browser and load numerous style sheets to deal with each situation.
