"easy to understand" depends a lot on the person involved. I thought CSS: The Definitive Guide was easy to understand because I was willing to put in the effort to understand it. Others might think it was dry or technical. There are a few other suggestions on the css-d Wiki http://css-discuss.incutio.com/?page=GoodBooks Nothing beats going to a bookstore and flipping through a copy to see if you like the style (or Amazon if they have the 'look inside' feature for the book you are interested in).
