signing off on Web stages?

Curious to hear what you do....
I'm working on estblishing procedures for Website development . . .
I'm wondering what is the best way to address
a formal "sign off" of the different stages of
development.
In printed work you submit a physical piece of
art that the client signs - to be kept in your files,
to guard against - "That's not what I thought."
How does a Web client "sign" a stage of development of
a Website?
Do you make a print out of the site and have them
sign that?
