First, do you actually want to have sub-domains, or do you want to define
several hosts within your domain?

In either case, the DNS configuration will need to be set up accordingly.
In the case of defining additional hosts, this will be done by the provider
(typically ISP or upstream provider) that administers DNS for the domain.
In the case of defining sub-domains, you'll want to get the delegations and
sub-domains set up, with whomever will be doing DNS administration for
each, and then have your current DNS provider make the appropriate changes.

You'll need to get IP address(es) allocated for this purpose, or possibly
add additional CNAMEs to ones you already have. Typically you'll obtain IP
addresses from your upstream provider. Which way you go (or both) will
depend on what exactly you want to accomplish).

This question has been asked and answered frequently on this list, so a
check of the archives would be suggested.
