I knew about this option, but I have never been able to figure out how to
get it to work for stuff in the <head> tags, since you can't "see" it to
highlight it on the page.  Can you apply it to the actual code somehow?

There is also a GUI an option to add editable regions as
necessary:

Modify -> Templates -> New Editable Region
