apache and PHP

I'm using Apache version 2 on my PC so that I can check SSI includes before
I upload my webpages, no problem there, but what do I have to do to the
Apache config file so that it will recognise PHP includes?
Is it just the config file I have to change or maybe I'm not doing the
include instructions properly.
I'm using   <? include ("menu.php"); ?>   with the .php file just a renamed
text file containing html.
