You can also use a script to distill multiple PS/EPS files into one
document, which is much more effective of you have lots of pages (e.g I use
this to combine about 40 PS files into a 400 page document)
It also avoids problems with font subsetting in text-heavy documents. Email
me if you want a copy of the script,

Make your documents, each page separately, as PhotoShop docs. save as pdfs
using the Print command and choosing Virtual Printer as your print option.
Then in Acrobat Distiller 4, you can open one of the pdfs, insert pages
from the other docs, and voila!
...of course, you need Acrobat 4 and Virtual Printer, so if you don't have
those you might just want to take the .ps docs to your nearest Kinko's...
