why use cookies for shopping cart?

Hi all

I have noticed alot of people/sites use cookies to store the information in
a shopping cart.  Why is this?  What is the benefit of using this method as
compared to storing the information on the server?  What about people who
disable cookies?  

Normally I wouldnt care about differences like this, but there are so many
people doing it this way that I begin to wonder if there is some reason
that it is so popular - and if I should consider changing the way I do it.
