I teach the Intro to HTML 4.0 class for the IWA-HWG and we stress 
them not to use the font tag or the center tag or any other deprecated 
tag. We also teach them basic CSS and stress using lowercase tags 
and quoting all attribute values. We also explain how this will help them 
transition into XHTML when they are ready for that move. It's important 
to give the student a good, solid structural base so that they can 
understand what they look at when they view a page source or, like 
someone else mentioned, they can make changes on a page that was 
written before XHTML came about.
