Unfortunately, doing so will give you a ragged edge unless you make good use
of the matting features when exporting.  PhotoShop is a tool on its own, and
after about 6 years of doing it, I consider myself being very good at it,
though I KNOW there's things I don't know yet or don't use to it's fullest.
You need a very good knowledge of gif and jpeg and PhotoShop and how it
deals with transaprency to be able to output something 100% okay.

Another great and easy way to select text (or just about anything) is to
hold down the control key and left click the layer containing the text in
the layers palette. This makes a perfect selection every time (provided
whatever you are trying to select is on it's own layer with a transparent
background)

Put your gradient on layer 1.  Do your text on layer 2 in black on 
white.  Render layer 2.  Use the magic wand to select layer 2's background 
(the white part).  Invert the selection.  Press delete.  Export the GIF 
with white as the transparency color.
