Do as I'm doing here: http://www.fiatcoupe.net/owners. Click 'register'.

There's a second box users can fill in when they don't see their country
listed.  The processing script will check the dropdown first and if that's
not passing a country, will take the textbox content.  Also easy to validate
in javascript (as I'm doing).
