Well, thanks a lot - I'm having great fun with the menu now!
For those of you who want to know, here are the answers:

=1=1=1=1=1=1=1=1=1=1=1=1=
Right click in the programs menu and select "Sort by Name"
This works OK, except any shortcuts to programs go below the folders, and not 
alphabetically.  To cure that you need:
=2=2=2=2=2=2=2=2=2=2=2=2=
To drag and drop the folders/programs wherever you want. Highlight a program 
or folder, and keeping the left mouse button down, drag it wherever you want.
OR
=3=3=3=3=3=3=3=3=3=3=3=3=
Hack the registry!
