how many special characters to use?

I'm working on a site which will have weekly
updates and additions of sermons.

The author uses a lot of traditional punctuation.
dashes, quotes, parens, em dashes, en dashes . . .

I'm wondering how many of the punctuations should I use
special codes for? 

I'm looking at the WebMonkey Special Characters set
http://hotwired.lycos.com/webmonkey/reference/special_characters/

and I'm thinking I could spend a lot of time changing all those 
punctuations . . . to their ASCII code!
