Thing is, users will generally only set their own preferences to override
the page coding for a good reason - for example, someone with poor eyesight
may well set background and font colours to some strong contrasting
colours, and perhaps set the default font size to large, so that they can
read pages comfortably. If you override their settings, you may well make
your page unreadable for them.
I think we need to be flexible enough - and generous enough :-) - to code
our pages for how we'd like the majority to see them, and then sit back and
accept that some will choose to view them differently for their own good
reasons.
