Image Question

I know many sites prefer the use of GIFs while others prefer JPGs. For what
instance should each format be used? Is one more able to load quickly? What
is the best to use for clear images, easy loading?

The site I am developing will have ad style images and a header that will
have mostly Text style graphics.
