I love all this, makes me feel that I'm not alone dealing with clients.
One way is to make very sure, at the start of the project, just what you
will be expected to do, and how many times the client will be allowed to
make changes. Put that in writing, a Letter of Intent if not a formal contract.
I follow the same sort of system as when editing a book. Prepare the site,
present to client for comment and modification (proofing), then make the
changes - and then after that .... we are talking about variations to
contract (which the original letter had recognised - and stated a price for.
